Beginner's Guide to Making Kombucha
STEP 1: NEED A SCOBY
SCOBY stands for Symbiotic Colony of Bacteria and Yeast. I often call it a “SCOBY” but it is actually a collection of many microscopic microorganisms. There are 2 ways you can get a SCOBY: Ask for or buy someone else’s active SCOBY. Buy a dry SCOBY and activate it yourself. The following instructions are for making regular kombucha using an activated SCOBY. For dry SCOBY, follow the supplier’s instructions.
STEP 2: PREPARE TOOLS & FUEL
1. Tools: Large glass jar for fermentation (1l or more) Glass bottle to store tea after fermentation Plastic or wooden stirrer (no metal) Mosquito net or other thick woven fabric or coffee filter paper Tool to tie the mouth of the jar (elastic band, rubber ring, jar tie tool that is still working well) Filter
